Whole Milk Mozzarella, tomato sauce, pickled pineapple, double-smoked bacon, Aranya black pepper
In the New York pizza universe there are two very polarizing subjects: ranch dressing and Hawaiian pizza. I said I’d never have a Hawaiian pie on my menu and technically I don’t. What I do have is this pizza that has no name, referred to by the Shaka or “hang loose” sign, something I grew to love during my time making pizza on the Big Island of Hawaii.
With a base of whole milk mozzarella and tomato sauce we top it with pickled pineapple, pickeled Jalapenos, double smoked-bacon lardons and Aranya black pepper.
