This is our riff on the classic Roman pasta dish: of course we start with Lioni Latticini fresh mozzarella as the base with plenty of pecorino Romano, and guanciale from Salumeria Biellese + a farm fresh egg. Post-bake the pie gets plenty of fresh ground black pepper (the black pepper is why it's called carbonara!) and a generous amount of 18-month aged Parmigiano Reggiano
