This pie is our vegan showpiece: we use Numu vegan mozzarella and our tomato sauce as the base and seitan-based pepperoni & spicy Italian sausage from Be-Hive. Complemented with our roasted peppers, balsamic onions and roasted garlic.
Back in the day, I watched everyone of Mike Tyson's fights. His first fight out of prison was against a tomato can named Peter McNeeley. I booked a table for 10 at The Sporting Club in Tribeca to watch the fight. One of my party didn't show, and management asked if they could seat someone at my table. That someone was Wilt Chamberlin accompanied by 2 hookers. Chamberlin ordered a White Russian & sat down. Before Wilt’s drink arrived, McNeely’s corner threw in the towel even though McNeely was ready to go. No one was happy, least of all Wilt. He got up & left and I’m guessing, got busy with his friends. I drank his White Russian and paid the bill.
Iron Mike has been vegan for 10+ years and is my all-time favorite fighter. Baddest man on the planet.
