Whole Milk Mozzarella, Tomatoes, Sliced Chicken cutlet pieces, red onion, double-smoked bacon, ranch dressing (BBQ sauce on request)
Let’s get the name out of the way first. The great 90s rock band, The Black Crowes, played an unannounced show in 1994 at CBGBs (under the pseudonym Blessed Chlorophyll and a nod to their pot-smoking tendencies). Lead singer Chris Robinson knew one of the original partners at the Three of Cups (Lenny Todd) where I was making pies in the East Village. Chris and Lenny had both worked at Fellini's Pizza in Atlanta before hitting the big time in their respective fields. I got to hang out with Chris and the band a few times (and caught their show at CBGBs). Those guys knew how to play and how to smoke.
This pie is called Blessed Chlorophyll because it’s a pseudonym for me as well. Maybe it’s a Bacon Chicken (BC) Ranch pie. Maybe it’s a BBQ Chicken pie. Call it what you want. It’s a much-maligned fan favorite. How could it not be? With our base of whole milk mozzarella and tomato sauce, sliced pieces of chicken cutlet, double-smoked bacon from Muncan Meats, some red onions and our house-made Ranch Dressing generously applied post-bake. How could it get any better? Well, you could request some of my house-made BBQ sauce that I keep behind the counter for the pie!
